See Brewing Classic Styles for more information on this recipe. Note that the Raspberry Purée goes into the secondary fermenter BEFORE the nearly fermented wort from the primary is poured over it.
The original recipe calls for SafAle US-05, but I think that SafAle Belgian Saison 134 might be a more flavorful choice, especially since this beer uses raspberries. .
Note the shocking sticker price for the Raspberry Purée is $49! It comes in 3 lbs cans.
