Notes

I rehydrated the London ale yeast, pitched it, then remembered I hadn't oxygenated it. Oops. Quick 20 second oxygen blast, seemed to cause no harm.

I ran the chiller longer than last time and got the wort to 70* before pitching. Good.

Quick fermentation, got action in <24hrs.

Result is nice! Best brew in a long time (ever?). Great flavor, but it's a lot lighter than I'd anticipated. Either I need to pump up the grains, or get the mash efficiency up.

Transferred to Red Seal corny 11/24/23 with ???g of corn sugar.
