—Crisp and clean Pale Ale that allows for the citrus and fruit flavors of the Australian hops to shine.
—Mash in and hold at 150° for 60 minutes stirring occasionally during the first half. Add the gypsum at the beginning of the mash.
—Collect 6.5 gallons in the kettle to allow for evaporation during the 60 minute boil adding hops at the designated times.
—15 minutes of extra boil time after flame out to allow for whirlpool and rest before chilling down to 65° for primary fermentation.
—Ferment at 65° for 2 days and then allow temp to rise to 70° until fermentation is complete and final gravity has been reached.
—Crash temp to 65° and drop yeast. Add first dry hop charge and purge the air from the fermenter. After 2 days, add the second dry hop charge and purge the fermenter again.
—After the 4 days of dry hop, crash the fermenter down to 38° over 5-7 days and hold. During those days, drop the trub from your fermenter and allow for the beer to clear for an additional 5-7 days.
—Keg or bottle as usual.
