Fermentation temp note:
63–65 °F (17–18 °C). After about 5 days or so, jump up to the 70–72 °F (21–22 °C) range until final gravity is reached. By waiting to increase the temperature you avoid the fruity notes you can get from higher temperature fermentation. Then crash to 35–40 °F (2–4 °C) to drop the yeast before dry hopping for 48 hours at that temperature.
