Notes from Bman:
Target water: 95 Ca2+, 18 Mg+, 37 Na+, 100 Cl-, 200 SO4-, 0 HCO3-
Also add some ascorbic acid to the mash. I used 3g.
Mash @ 152 for 60min. 10min mashout @ 170.
60min boil. No hop additions.
Hopstand @ 170 for 25 minutes

I used voss kveik, but WL London fog would also work. Any IPA yeast. Ferment at a temp that nets you a little fruit but not much extra and no fusels.
For last 2 days dryhop with
2oz azacca
2oz citra
1oz sabro
If using kveik this will be at high krausen
Transfer to keg, force carbonate, and let it sit for a day or 3 extra until it doesn't taste like hop burn.
In my taste notes I claim that I got mango HiChew, orange juice, grapefruit, overripe passion fruit.
If you want it more bitter use a HopShot during the boil. I don't like the vegetal peanut shell character from boil addition hops I can get in IPAs, so I don't add them. Brewfather says it's 27ibu
I think it was plenty balanced though. With kveik it came out rather sessionable at 7.2% abv
