Since this recipe will be used to also make another beer (Saison) with a lower ABV (2 - 5.0 gal. batches), 6 gal. of the Saison was pulled off for cooling and racked to the carboy. This beer was then boiled an additional 15+ min. after the late addition DME was added. |
