Notes
-treat 7.5-8gal water, hold 2-2.5 for a "sparge" goal is ~6-6.5 after mash. Goal OG is 1.68 -harder to do with BIAB!
-adjust pH w/ lactate to 5.3
No boil! -raised temp to 165 for 15mins AFTER chiller is placed in kettle to "sanitize".
-nutrient added then
-small "whirlpool" additions for 10mins before cooling
-O2 for 2mins @1.5L/min prior to pitching yeast
-Cool Fermzilla (as much as possible with setup) after FG reached or is close, add ALDC enzyme to reduce diacetyl, dry hop while limiting O2 (I bubble CO2 through dip tube to create positive CO2 pressure in Fermzilla while pouring hop pellets through a funnel.
-Closed transfer to keg
