Notes
Heat 6.375 gallons of water to 163 degrees and add 5 tsp of 5.2 ph stabilizer and grain for a 60 minute saccharification rest.
Add heat to raise temperature to 168 degrees for mash out.
Sparge with 170 degree water to collect 7.5 gallons of wort.
Boil for 60 minutes, adding honey and yeast energizer during the last 10 minutes of the boil.
Turn off the heat and add the hop stand hops and let sit for 20 minutes.
Cool to 75 degrees, pitch yeast and aerate.
After active fermentation begins, add high krausen hops.
After 1 week in the primary fermenter, rack to a secondary fermenter. Discard the spent dry hops.
After 1 week in the secondary fermenter, add the dry hops and let condition for 1 week, then rack to kegs and add priming sugar.
Allow to condition for 2 weeks then attach to system, chill and serve!
