Mash in with 8 pounds of Pilsner malt, 3.5 gallons of strike water at 162 degrees F. Target temp 148F.
Hold 148 for 30 minutes, then ramp to 211. Hold 211 for 30 minutes, then cool mash to 165 deg F.
Add remaining 16 pounds of malt, 5 gallons of water. Target mash temp of 148 deg F.
148 30 minutes, 158 20 minutes, 168 10 minutes.
