Notes
Brewed 06/10/23. Mash in with 12.5 L Boulder city, 0.25 ml lactic acid, 1 tsp CaCl at 118 F. Raise to 130 F, 10 minutes. Raise to 145 F, remove decoction. At 45 minutes in, add decoction back, temp 152 F. Raise to 170 F for mash out. Sparge with Boulder city + 1.5 ml lactic acid. Pitch dregs from 2.5 L starter. Ferment at 50 F. Racked to keg on 06/26/23; gravity 1.010. Decided to skip diacetyl rest as no diacetyl detectable. Begin cooling for lagering, 3 degrees per day.
Tasting notes 11/5: Excellent pils. Firm, herbal bitterness; could go slightly more, but not much. Floral quality. Bestmalz produced a light but slightly cloudy appearance; different malt next time. Or it could be that I forgot the acid malt? Good maltiness, perhaps just a little bit much; perhaps try a northern european pils yeast next time. Definitely improves with lagering, so don't rush into production.
