Beer came out great. Nice light and flavorful. Could def brew it again just like this. The first few days it tasted like belgian blonde. After a couple weeks I thought I could taste lime and corn but now I do not. I can taste a bit of grainy flavor...

Next time you could consider trying to go for more corn flavor (not sure how, just more corn, or do someting to the corn or get a different corn that retains more flavor?) and more lime essence which could prob be done with some particular hop. Also consider lowering the vienna and pilsner, for more of a clean taste.

Came out good. Tried using omega models strain but had to settled for 2007. After a couple days no bubbler activity or krausen so i thought it was dead so I added a pack of 3470 maybe wasn't necessary maybe I just don't understand truly bottom fermenting yeast.

Can one tell the difference between this and American lager, or is it all in your head. To me this brew has notes of lime and corn which seem pretty distinct to mexican flavors.

At first tasted like belgian single (same hops!) So I let the keg chill for a few weeks and when I retapped it it was really clean clear and under control

need to dial in water. possible to use some BSG hops instead as well.
