If you want to make a damn good german hefeweizen, do 60ish% wheat, 20% munich malt, 10% vienna, and 10% pilsner. Use hallertau/tettanger hops (which ever one you like more) and wlp 300 and ferment around 18 degrees or lower. Your total grain bill will be around 10-11 pounds of grain. I love wlp 300 and I would definately use it. As far as the hops, I would do a FWH as it adds a little complexity to the beer.
