Notes
Brewed 12/27/22. Mash in w/14 L of water; 10' at 130 F, raise to 148 F, remove decoction. Mash pH 5.3. Hold decoction 15' at 150 F, boil 20', return to main mash and hold until 1 hour. Raise temp to 166 F for mash out. Boil 70', cool to 58 F, pitch 0.5 L from 2.5 L starter.
Tried to ferment at 50 F but cold temperatures in the garage led to some downward excursions, perhaps to 45 F. Note to self, primary fermentation for lagers is not recommended in the coldest months of winter. Racked to keg on 01/27/23, gravity 1.013. Sample tastes very good, honeyed Czech maltiness and substantial Saaz bitterness in evidence. Started reducing temperature for lagering.
