Notes

After boiling the volume will be 10 litres. Add 3 litres of cooled water (from fridge temp, 1C) to cool down the temperature faster. After the temperature is <30C add yeast starter

The yeast starter has a volume of 1L and consists of apple cider with enriched culture from spontaneously fermented apple cider by Elegast (specifically their "Farmhouse Saison Cider"

The final fermentor volume will then be 14 litres.

The Honey used is from beekeeper Marcel from "The mountain of the Lords

Very good beer, it has a light body and is very drinkable. The honey gives it a subtle flower complexity and the wild yeasts some funk. The taste is like a very mild Weizen with some subtle funk and honey aromas. Perfect for a hot summer day evening during a barbecue
