Brewed early Nov. 2022

Great beer, but the faint esters of Dupont slightly muddied the fruitier character of Rochefort. Next brew, experiment with maybe Westmalle as the phenolic strain instead of Dupont.

Biscuit character was a little too pronounced, reduce to 4oz in next iteration.

Bitterness wasn't pronounced enough, increase IBUs to mid to upper 40s

Hop aromatics were not pronounced enough, increase late hops by 1 oz.

Wasn't dry enough but higher ABV than intended. Replace 1lb Pilsner male with an additional 8oz of Dextrose
