1) Target Finishing pH of 4.2.
2) Post boil pH of 4.9
3) Increase whirlpool additions to about 35 IBUs w/ NYS hops
4) Increase dry hops and cool fermenter to 60F post ferm then add dry hops, dump 3 days later. Close blow off.
5) Mash at 155 to achieve a slightly sweeter bodied beer
