9/13/2022
Approximately 30 lbs of red Muscadines were Juiced yielding 2 .125 gallons of juice. The SG was measured at 1.061 and the weight of the grapes for the recipe was adjusted to give that SG.

2 campden tablets added.

9/14 Added Yeast Nutrient, Pectic Enzyme, Wine Tannin. 1/2 packet of Premiere Classique yeast.

4/6/23 had transferred the original ferment in November. Today mostly clear, some ppt and crystals. transferred to a clean vessel today. SG =1.002. Taste, fruity, dry, some tannin. No off flavors.
Give it a few weeks to settle and bottle. Noticed a white film on surface of liquid and walls of carboy.
Transferred 4/24/23 to pail for bottling will add campden and sorbate. Tasted again, like before, good.
