Use Briess Cherrywood Smoked Malt, if you can find it; Weyermann Rauchmalt, or other smoked barley malt, if you can’t.
Want soft-ish water, with about a 2:1 Chloride to Sulfate ratio (want the maltiness to balance the smokiness).
3.7 gallons in mash, lose 0.3 to grain absorption, so 3.4 preboil. Evaporate 0.6 during 60 min boil, and about 0.05 to hops absorption, so 2.75 gallons into fermentor. About 0.25 lost to trub post-fermentation, so rack 2.5 finished gallons to 2.5 gallon keg.
