First Ginger Beer without extract tin.
Ginger is finally finally a decent price. It has been $40 - $60 per kilo!!
I did lots of reading and I don't want this to be too dry and harsh.
Thats why I chose to use a good fermenting American Ale yeast Vs Champagne yeast which is designed to dry it right out.
Update
It was still very dry and required some back sweetening with a Ginger Syrup (e.g. Sodastream) at the time of serving.
