Notes

Heated 85 litres of strike water to 75C, added to mash tuns and then mashed in 30.5kg of grain at 2.78 litres per kg. Masked for 60 mins, infusion mash with no mixing or recirc.

Heated a further 85 litres of sparge water to 76
C and sparged to collect 150 litres of wort into the kettle.

Wort brought to the boil. Hop schedule in boil, 400g Nelson Sauvin at 10 mins from flame out, and 200g of Amarillo cryo hops at whirlpool 75C for 15 mins. Then cooled to pitching temp 18C overnight, starter of safale 05 added to fermenter. Wort aerated into fermenter.

Ferment underway within 24 hours. Held at 18*C for ferment. Pressure held at 5-7psi for duration of ferment.

Kegged and carbonated to 2.5 volumes.
