Notes
Make yeast starter 2 days prior using 4oz DME in 1000mL spring water (boil 15 minutes, chill, pitch yeast and aerate using stir plate).
Mash using distilled water with 2.4g gypsum; sparge and top-off to achieve 4.5gals starting volume
Boil 75 mins, adding hops/extras per schedule.
After 20 mins, add 1 lb DME
After 40 mins, add 1 lb DME
After 60 mins, add last 1 lb DME
Chill to 70 and pitch yeast.
Ferment at ~68-70, using blow-off tube, then airlock.
Once fermentation complete, add dry hops for 3 days
Xfer to keg, chill, and carbonate to 2.6 vols CO2.
Bottle using beer gun.
