CaCl + Gypsum
Mash pH 5.2 phosphoric acid
Adjust down to pH 4.6 @ 10 min ~1/4 tsp lactic acid
Pitch yeast @ 68° and increase to 72° after ~24 hrs & hold
Day 5 remove 72° and let temp fall. transfer to keg onto hop addition and hold temp at ~55° outdoors or in fridge @ 7-10 psi with spund valve
Leave for at least 48 hrs then drop temp to 35°
