So we are drinking this beer now and I must say it is absolutely sublime. It was a big success in terms of achieving a noble subtle champagne-like beer. The brett and regen house yeast combo along with the low srm grain bill and high natural and fed CO2 cellar treatment gives it a very elegant clean and erudite character. I have recently moved from a BIAB mash to a Blichmann false bottom 20G mash tun. The added grain notes are very evident and welcome. I am happy and proud of this beer and if you make it, I hope you like it too!!
