Notes

Coopers Sparkling Ale clone except - all-grain, no sugar and Magnum instead of POR. Recipe taken from the infamous sneaky photo of 'Coopers whiteboard from yr 2000'

Keg conditioned, not force carbonated.

Yeast is Coopers re-cultured from Sparkling Ale bottles on the stir plate for a week building up to 5 litres. Innoculation was 100ml per litre of saturated yeast.

NOTE: Brewers Friend lists Coopers Yeast as high floculation. Coopers Yeast is LOW floculation and stays in suspension through to the final product. Coopers Sparkling Ale is naturally a cloudy beer.

This beer ended up too sweet and out of balance. Next time decrease the base malt by 15% (approx) and replace with plain white sugar which will help dry out the beer. Carbonate to 2.5vol of CO2, original sparkling ale is quite high in carbonation. Other than that, the flavour is spot-on for a Coopers clone. Looking forward to brewing this again. Also, one keg was force carbonated, the other two are being naturally conditioned, will be interesting to compare the results.

This beer is too sweet so will dry out with sugar next time, bitterness is about right so will leave.
I did brew a second beer, exactl;y the same recipe/mash regime as Coopers clone but, hopping was 250g Citra at flameout and 250g Citra dry hop. Dry hop was added about 2/3rd way through fermentation to pick up on bio-transformation of (mainly) terpines by the yeast. Super tasty beer, not a lot of bitterness, very soft fluffy mouthfeel, low acidity, no piney or resinous flavours. perfect balance, best beer I have ever made.
