Cover loosely with a sanitized piece of brew bag and aluminum foil. Ferment at ambient temperatures. After the initial fermentation activity has slowed down—a few days—you can replace the foil with an airlock.
Back-sweetening: After fermentation is complete, add 1 tsp potassium sorbate when kegging. 1 day later, back-sweeten with 1/8 can of frozen apple juice concentrate.
Packaging: Bottle from keg and age for 3-6 months.
