Prepare pumpkin a few days in advacne. Cut pumpkin into strips, lay on a cookie sheet and cover with brown sugar. Roast in oven at 375F for 2 hours. cut off skin and cut into cubes. On brew day put in a mesh bag and put it in the kettle for the entire boil
