hoping for fermentation around 52F in my basement (with help from ice packs).
ferment for 2-3 weeks in conical.
move to keg, increase temp to 65F for 3 days
slowly lower temp to 37F over about 9 -10 days
lager for additional 2.5 weeks at 37F
would love to do 10 gallons but do not have room to store 2 kegs for that long.
