Smooth brew day-- 11/17/2021 Santo Domingo. 71% brewhouse. 6 gallons to fermenter. Aerate 1 minute shake fermenter + air pump 1 hour. Temp set to 63º. Ramped up to 67ºafter 5 days. 1.003 after 7 days!! I guess the enzyme is working, added at yeast pitch.
