So the Target of this Beer was to embody the popular Japanese drink the Oolong-Hai (Shochu Iced Tea). I was gunning for an herbal earthy core with a little spice and a touch of lemon. After a two week ferment and a two week cold crash it came out great. Nailed all the beats I mentioned before. I'm going to let it sit in the keg in the cold for another week and test it daily to see how the taste changes.
