mash temperature began to rise and had to turn off heat to bring back down to temp. Temp got to 163. turned off at this point and let mash continue til timer went off. end temp of mash was 152.
thick mash bed, had to disturb to get liquor to drain. so im guessing liquor to grist was high. more liquor than grist.
added 64 oz of water to bring down abv. so pre boil is now 7.5. will use bucket as fermenter.
