Notes
Using fresh wild hops I found for this one. Very herbal so hoping it is a saaz or Hallertau type taste in the beer.
Double Decoction method with low temp acid rest.
Pressure ferment at 1 bar and 15.5 C.
After gravity drops to below 1.020, +1C/day 3 days + 1 day at 18C
then transfer to chilled, pressurized serving keg or leave in fermentation keg.
Cold crash and chill at 2C for 5 days then back to 15C for lagering (3-4 weeks). At least two weeks.
