Notes
Ferment in SS Brewbucket for the first 3 days (65F), as high krausen subsides transfer to CO2 purged keg and hop cage of 2 oz of Citra cryo. Leave cage in keg for 2-3 days (65F). Then remove cage, attach keg lid and purge headspace 15 times very slowly to reduce aromatic losses.
Keep at 65F for 1 day then boost up to 70F for 3 more days before reattaching to CO2 and cold crashing the keg at 15 psi down to 35F.
Hold at 15 psi for 1 week then drop to 10 psi.
Do not release CO2 if it can be avoided.
