Notes
1.) Mash grains at 154 degrees for 60 minutes using 3.5 gal of strike water.
2.) Sparge with 3.25 gallons of water and bring to a boil.
3.) Right when the boil starts, add 0.3oz Simcoe & 0.1oz Azacca.
4.) Boil for 10 minutes then add 1lb lactose.
5.) Boil for another 50 minutes (60 total) and chill to 180 degrees.
6.) Add 0.5oz each of Citra, Mosaic, Galaxy, and Azacca along with 1 vanilla bean (split it and scrape the insides into your wort then throw the rest of the bean directly in the wort). Whirlpool for 15-20 minutes.
7.) Chill to 64 degrees and pitch yeast.
8.) After 2 days of fermentation, add 0.5oz each of Citra, Mosaic, Galaxy, and Azacca (preferably in nylon hop bag).
9.) After one more day (3 days total fermentation) add 0.5oz each of Cirta, Mosaic, Galaxy, and Azacca (preferably in nylon hop bag).
10.) After 7 total days of fermentation, remove the first two hop bags and add in 2oz each of Citra and Mosaic along with 1 vanilla bean (split it and scrape insides into hop bag then throw the rest of the bean directly in the hop bag).
11.) Ferment for an additional 7 days
12.) Keg it up and set PSI to around 10-12 on your regulator. After about a week, it will be ready to go!
