Omitted the black malt/roasted barley, increased pale and crystal malts.
Using Harrow water.
Using false bottom and hop basket.
Whirlpool hops dropped in without basked.
EDIT we have now changed the hops to what we have in the freezer, and added lots more grain to increase the strength.
First choice for yeast was White Labs Burton. Decided on Mangrove Jack M15 over M41.
M41 would have more spice and less body, and higher strength
