Pitched yeast at 62f.
1/24 1.047 (11.29% ABV)
1/29 1.045 (11.55% ABV)
1/29 Started soaking nibs in vodka.
1/31 Racked onto soaked cocao nibs.
2/21 added 1 each of the chile peppers.
2/28 added vanilla
3/7 added cinnamon
3/14 racked to secondary. Purged with Co2.
6 weeks: Soak cocoa nibs in vodka in mason jar. Add all to secondary.
3 weeks: Add chilies dry to secondary. (No vodka)
2 weeks: Split and scrape 2 vanilla beans. Put all in vodka, then all into beer.
1 week: Break up cinnamon, put in mason jar and cover with vodka. Add all to secondary.
9 Months in Secondary.
