Notes

Brew notes 1/9/20:

Strike water was 158, initial mash temp 148-150. After about 40 mins, mash temp was down below 145. Heated with the intention of a high mash step around 162, but blew through this to mash out at 170. Luckily it looks like I still got close to 80%+ efficiency which is right where I wanted to be anyway. Ended up with 1.035-1.036 pre boil which is 86-88% efficiency which is better than I could have asked for. 30 minute whirlpool/hopstand starting at about 175.

Came out with 7.5 gallons of wort compared to expected 7. Changed the boil to 80 mins to boil off some extra water.

Final OG approx. 1.051. Pitched on top of existing yeast bed at 63deg. Fermentation chamber set to 54deg SP.

Kohatu (NZ) 1oz - Was released in 2011 by the New Zealand Institute for Plant and Food Research. It is a lower Alpha variety (6-7%) that is a descendant of Hallertau Mittelfrüh, which is where Kohatu inherited its high Humulene oil content from. This high Humulene percentage (36-37% of total oil) imparts a complex woodsy and resinous character. Kohatu also has a high Myrcene content (35-36%) that gives it a very fresh aroma of tropical fruits, making it an excellent hop for single-hopped pale ales and session IPAs.
