The idea for this beer is born from the desire is to make a beautifully red Irish Ale for St. Patrick's day. There are some later hop additions to add to the the overall character. More gypsum was used to offset the sweetness from the Cara Ruby and Special B

On February 15, 2021 the beer was transferred from the primary to the keg. I cold crashed the primary on February 7. The color is just a touch darker than I was hoping. The OG a bit higher. I did boil for about 2.5 hours as I did want the OG higher than my original SG reading of 1.04. The gravity sample at kegging is pretty close to what I was hoping. Malty sweet with a nice bitterness. Once this is carbonated it will take on a whole new profile. It will condition until March 13, 2021... The weekend before St. Pat's

What I will change for next year: cut the SO4 so it is more balanced with Cl-; add a touch of roast... I am not a big fan but I think that would really enhance the malt character. Really good overall. Perfect easy drinker.
