Partial volume mash, boil from 4.1 down to 3.5 gallons, then top up with RO water to 5.5 gallons total. Then split into two 2.75 gallon batches (3 gallon fermenters)... pitch Omega All The Bretts into one, and a mix of Philly Sour and Omega Where Da Funk into the other (give the sour a couple days head start to make the Lactic acid first). After about 3 months, dry hop (split evenly, 4 oz per batch) before packaging.
