The late addition 4 oz of DME (I had wheat on hand - use whatever) is added to 2 qts water in separate pot during the mash, and boiled down to one pint or cup even (reduce by 75%, or more even, to create “kettle caramelization” Maillard reaction flavors), then added into main boil toward the end.
Use yeast slurry from previous batch (mine from Best Bitter I’m kegging same day), or build big enough starter for big beer. Oxygenate adequately. Start fermentation at 64° for about three to four days, then raise to 66° for two, 68° for two, and then 70° to finish off...
