Notes
-Steep specialty grains at 145F for 30 minutes and then remove from kettle.
-Stir in Traditional Dark DME, bring to gentle boil
-Add first bittering hops, start 60 minute timer
--At at beginning of boil, steep following ingredients in 6 ounces of boiled water in separate vessel to steep:
4 Cinnamon sticks
.5 tsp Ginger Powder
.5 tsp Nutmeg
-Add Cascade at 20 minutes
-At 5 minutes, strain steeped spices and add to boil
-Add Willamette at 3 minutes
-Add EKG and 1tsp Vanilla extract at 1 minute
-Add remaining DME at flameout, stir well and cover for 5 minutes
-Chill to 65F
-Pitch two packs of yeast or yeast starter along with Clarity Ferm
-Ferment at 65F for three weeks
-Package and condition at room temperature 3 months
-Refrigerate and condition 1 month
-Enjoy!
