Flame out hop additions - add just after flame out, let steep in hop bag x 20 min, then remove bag, and rapidly chill to 68F or below.
Once at 68F, remove chiller, cover kettle with lid and let sit undisturbed x 1 hr.
Dry Hops:
Add DH near end of fermentation (on day 7-9) x 5 days of contact:
use muslin bag, 2 oz in each
after 5 days, loosen lid just enough to pull string, secure bag hanging near lid and out of beer (in reality, the bags were still 1/2 in the beer).
New post fermentation clarification process (this worked, 2nd pint was bright beer with minimal haze after 12 days in the keg):
Cold crash x 72 hours at 35-37F in kegerator
Add gelatin, wait 48 hours.
Keg beer
Add 6mL Biofine Clear into gas port, add CO2 to create seal (12 PSI) but don't fully carbonate
Chill x 3-4 days
Pull off 1 pint and fully carbonate
