Mash start 0840. pH about 6 - add 2 tsp Gypsum and 1 tsp Epsom still looking same, add 1 large tsp of each to sparge water.
Start recirculating at 0950. Start transfer to kettle 1015.
Fire up gas at 1030 with 20L, collect 50L - boiling at 1110.
Add 20gms Pacific Gem in Hop Spider at 1110.
Add 20gms Amarillo at 1237 for last 6 mins. Flame out at 1243.
Start cooling at 1245 with 2 coils and 2 fans. 42.5L after boil.
Add 30gms Amarillo for Hopback at 88-90C.
70C at 1253, 60C at 1257, 50C at 1303, 40C at 1310, 30C at 1325, 23C at 1345, 20C at 1410. Cooling water off 1415.
Gravity 1058 = 70%.
Start runoff to F2 at 1420. Collect 18.5L.
Start runoff to MJ at 1445. Collect 21.5L
F2 - Pitch yeast ( US05 ex 47 harvested today ) at 1530.
MJ - Pitch yeast ( MJ76 ex TAP harvested 22/9 ) at 1630.
Friday 4/12 F2 bubbling away nicely every 1 sec, MJ slow bubbling 10-16secs.
Saturday 5/12 both bubbling every 1 sec.
Monday 7/12 MJ bubbling every 3-5 secs put into fridge set to 13C. F2 bubbling every 10-15 secs add 50gms Amarillo as dry hop - temp 19.6C.
Tuesday 8/12 Add 50gms Simcoe to F2 for additional dry hop. F2 slow bubbling every 10-20secs. MJ at 14C bubbling every 3-5secs.
Friday 11th Move F2 to fridge 2.5C to cold crash.
Saturday 12th MJ Pilsner taste ok very slight vinegary sharness.
Monday 14th MJ still tasting vinegary maybe slightly more so???
Monday 14th Runoff F2 to Keg7 collect 17L. Gravity 1014. Tastes Delicious.
Wednesday 23/12 about to throw MJ Pilsner out due to vinegary taste still present, lifted lid and a sample from the top was surprisingly good. Put into fridge at 2C to cold crash.
Thursday 1100 tasting a whole lot better from tap so runoff to Keg8 and hope for the best?? Collect 19L plus 3 x 500ml bottles so 20.5L total and Final Gravity of 1014.
