13.125 lbs of apple juice = 1.5 gallons
Aim for 3.5 gals of wort, add 1.5 gals of apple juice
Check pH, aim for 4.4 (use lactic acid to get there)
Add handful of 2-row (~4.5 oz) to fermentor, purge with c02
siphon wort into fermentor
sit for 2-4 days, checking pH: target 3.5
bring to boil to start 10 min boil
