will be hard to achieve 11% without just slamming it with a ton of extract. which is possible. but expensive. not sure how committed to this beer i am at the moment. would almost rather brew a regular belgian dark strong ale.
added a little more hops and IBUs than byo recipe. just for inventory sake. and brewersfriend saying 20s for belgian dark is fine. byo has it at 13.
the cherry is supposed to be tart cherry purree and the dark sweet cherry should be sweet cherry puree. it will be wildly unclear how much gravity / abv we will get from these. just going off of the brewersfriend estimate.
