Grain bill should be 66% MO as the base, and 6.6% each of Munich, rye malt and crystal rye for aroma, Carafa III for ‘dark’ flavours, and flaked barley for head retention & mouthfeel. About 150g of Midnight Wheat will add colour without roast.
Hops, I’m thinking Citra and Amarillo, maybe a touch of Simcoe at the end of the boil, and dry hop with more C&A. As it’ll be hop forward, I’m not worried about yeast esters with this, so thinking of a British Ale strain, but need to make sure it can deal with the high ABV.
Drink fresh for hoppiness, obvs, but lay a few down as the malt profile will age nicely.
