Notes
Used 8.75 lb/gal for apple and cranberry juices. Didn't have cranberry juice in database, so second apple juice in recipe is actually cranberry (cranberry juice has less sugar than apple juice, so gravity will probably be a bit less than shown, but close enough). Used 1.5 gal Gravenstein Apple juice and 1 quart cranberry juice.
Mix bot and wine tannin together. Rehydrate yeast with GoFerm, then pitch. Add 1/2 yeast nutrients after 24 hrs, and other 1/2 after 48 hrs (de-gas must before adding to avoid foaming).
After fermented dry, rack and stabilize with KMeta and K Sorbate. After a day or so, mix in apple juice concentrate to back-sweeten and keg (or bottle and keep cold in fridge to prevent any chance of refermentation). Could also age on cranberries for a while if you feel it needs more cranberry flavor.
