Heat 3.5 gallons of strike to 163+ to mash at 152 for 60 minutes. Vorlauf and sparge with 4 gallons of 172 F water to obtain 6.5 gallons of wort. Boil for 60 minutes. Chill to 50F, aerate and pitch yeast. Ferment at 50F for 10 days then let temperature rise to 54F for 4 days. Then let it free rise to room temp 68-72 and hold for 2 days. Cold crash to 35F for 48 hours then lager for 6 weeks. Keg and carbonate to 2.25 volumes
