Add 4.5- 12" (9 oz) washed and trimmed of spines and steamed Agave Tequilana leaf tips (steamed 2 hours in oven at 250F) to mashing grains. Do this by tearing the roasted leaves into strips and then snipping them into 3/4 inch squares. Add mash ingredients, water to the rivets, mash at 156 F slide into oven set for 200F then turned off for 1 hr. OG 1.050 @ 80F , 2.2 gal. Rehydrate yeast for 20 min minimum starting at 104 F per manufacturer before pitching at 78 F . FG 7/5 1.020 nice amber light orange color, racked to 2 gal keg, medium pulque flavor, unique front end using tequila yeast! Very hopeful! |
