Notes
  • Strike water 67C, target 65.5 after grains added.
  • Add lactic acid to strike water before adding grains to hit pH 5.4.
  • Add grains and recirculate for 45 mins or until mash is complete.
  • Collect first runnings and sparge with the same amount of water you started with. Adjust sparge pH accordingly.
  • Boil for 1 hour, add 20g Mosaic after 20 mins.
  • After one hour, cool wort to 85C and maintain for 15 minutes with the addition of 30g each of Mosaic and Huell Melon.
  • Chill down to pitching temp, transfer to fermenter and pitch yeast after aerating.
  • Start ferment at 27C and gradually move towards 30-35C over a few days if possible.
  • Dry hop after 2 days with 15g each Mosaic and Huell Melon
  • Dry hop again after 2 more days with 10g Mosaic and 20g Huell Melon
