Have 20 mL TYB Saison Brett 2nd Gen Slurry from 25/08/19 est viability 20%.
Wyeast says 1.2 G cells / mL, so enter 0.24 cells / mL into calc = 5 G cells
0.75 pitch rate = 189 G cells. 1.7 L starter will get to 290 G cells (save 1/3) |

Guess at what I might have had if I didn't lose a bit, and also a /lot/ was left in the kettle due to the flowers and poor filtering
I also had the 40L start boil volume, and took ~ 3L to add late, ended up adding that and another 2L drained kettle, so boiloff is at least 5L / hr |

Not so sure about this culture anymore, it's getting quite dark, earthy and slight acidic, rather than the original brightness. Maybe cold with carb will be better

Kracanup Saison
Still very young
A: sweet, honey pilsner malt. Spicy and herbal hop character, reminiscent of noble. Slightly spicy phenolic note, pomme esters. Perhaps subtle diacetyl. Sweet balance overall, but mostly hop balance in complexity. Reminiscentof young and green flavours. As it warms, more earthy yeast notes.
A: straw to yellow with white head, good persistence and lacing. Low visible carbonation.
F: honey, cracker, malt. Herbal hop notes, and some earthy yeast. Some residual sweetness on the higher side but appropriate for style
M: light body, chalky finish
O: interesting beer showcasing simultaneously a lot of pilsneralt character and herbal hop character. The yeast, while appropriate, somewhat plays second fiddle. |

I think the sweety malty weird flavour is the melanoidin, cut it by like a third |
